Tartines aux Truffes (Truffle Toasts with Sea Salt)
A Truffle a Day — Day 17
When you have a truffle in the kitchen, the simplest of recipes easily becomes sublime. This is the ultimate illustration, with just a few ingredients and no measurements needed. If you don’t have a truffle at hand, try substituting a very thin slice of prosciutto (omitting the salt), or some fine slivers of olives.
Ingredients:
Baguette
Butter
Truffles
Olive oil
Sea salt
Preparation:
Slice baguette ½-inch thick, on the bias. Butter and place on a baking sheet to toast slightly. Slice truffles and layer on warm toast. Drizzle with a smidgen of fine olive oil, return to the oven for a few seconds to warm, and sprinkle on a few grains of sea salt. Serve immediately as an appetizer or as an accompaniment to a velouté (a cream soup).
