Avocado with Olive Oil and Truffle Slivers

A Truffle a Day — Day 25

Avocados have enjoyed an elevated status as a superfood of late, containing — among many other things — a generous amount of potassium and B vitamins, as well as quantities of fiber, despite their deceptive creaminess. They are also ideal for when you have a craving for something quick and healthy and delicious all at the same time.

A halved avocado with a drizzle of the best olive oil you can find and a gentle sprinkling of sea salt is a delightfully simple appetizer (or luncheon for one). The buttery flesh of the avocado is a perfect base for the richness of the truffle flavor.

Ingredients:

½ –1 avocado per person

Top-grade olive oil

A few grains of sea salt

Truffle slivers

Preparation:

Choose a ripe avocado, free from bruises; it should be slightly soft to the touch. Cut the fruit in half lengthwise and remove the pit. Drizzle with oil, filling the cavity slightly, and sprinkle with salt.

Finish it off with a generous slivering of truffles and enjoy immediately and immensely!
